Kimchi soup takes advantage of the fact that Kimchi Kraut is a complete flavour with garlic, ginger, onion, chilli and of course the acidity from fermentation. you can take this soup in many directions from a vegan dish to a full on meaty feast. For quantities be flexible and adjust to your taste and how much you want to make. Be sure to add lots of Kimchi Kraut as this is the flavour base. I have suggested a recipe with quantities for two people.
750 ml Stock (pork, chicken veg) or water 190 g of Kimchi Kraut (about one pot) 1 Tbsp Peanut butter 200 ml coconut milk or coconut cream 1/2 tsp sugar or honey squeeze of lemon or lime juice 1 tbsp fish sauce (optional) Optionally when hot add udon noodles or chopped lettuce, bok choy, cooked pork belly slices, prawns or tofu for example.
